Cranberry Fruit Nut Bread

 

2 cups flour, all purpose
1 cup sugar
1 ½ tsp. baking powder
½ tsp. soda
1 tsp. salt
3 Tbsp. butter
1 Tbsp. grated orange peel
½ cup orange juice
1 egg, beaten
½ cup nuts, chopped
1 cup fresh cranberries, coarsely chopped

 

Mix flour, sugar, baking powder, soda and salt in a stand mixer.  Cut in butter until
it resembles coarse cornmeal. 

In a separate bowl combine orange juice and orange peel with well beaten egg. 
Pour these ingredients all at once into dry ingredients, mixing just enough to
dampen. 

Fold in nuts and cranberries.

Grease a 9 x 5 x 3 inch loaf pan.  Put bread mixture into the pan. Spread corners
and sides slightly higher than center.

Bake at 350 degrees for 1 hour until brown and cake tester comes out clean.

Cool about 10 minutes, then remove from pan.
